This is how I have wired my original version snesp (yes I edited the diagram extremesonics made)
It is not working at all and I can't seem to figure out why.
One Question: Is it necessary to short the HP_L HPS HP_R together even if you didn't LED mod.
Also I think my grounding may be wrong.
So any advice would help me dearly, as I am so close to completion
It doesnt look like you have any direct power or ground to the system in that diagram. Other then that it looks fine to me.

Gee that drawing looks awefully familiar
EDIT: curses you credited me, now I can no longer mock your theviry
Oh yeah the problem I had with that diagram was the audio and video weren't grounded(spot 5 and 6 on the multi out on the SNES, to pins 4 and 8 on Slot 2 on the PS1 screen)?
Doesn't matter which goes where(example. spot 5 to pin 4, and spot 6 to pin
Why don't you try getting a second 7805 for the SNES instead of getting power off the one on the screen? The screen might be drawing too much power from that regulator to have any extra left for the SNES, especially if you didn't do the LED mod. And yes, you have to wire/solder the headphone spots together, they normally go to the headphones jack on the screen and the speakers will not function without them being connected.
Evilness, usbcd36 is right you cant run the system off the regulator for the screen. The typical 7805 can only pass about 300-500mA the system will use that alone. If you still have the 7805 from the console wire your battery straight to the input and ground that should fix the problem.
If you still want to try the setup you have go to digikey and buy one that aloes 1A or more current to pass through.

Well I will attempt all the I deas here I was originally going to use the 7805 but took it out for space when I saw extremesonics diagram but didn't even associate the power difference due to the screen being modless.
To extremesonic: I didn't have 8 grounded off the screen so that needs done and ill try grounding the whole screen the way you have it in your diagram.
Sorrry to not edit
Power has gone to the Snes board because the led shines and the screenscreen makes a zing noise but no light.
This is my current diagram but I have no clue whats wrong now...
Do I need to ground pin2 next to the 7.5 in?
EDIT TO IMAGE: its not on the image but I connected pin 12 to the 7805 on back.
You should power/ground the screen from pin 1 and 2 on the left connector, not through the 7805s. Maybe then it will work? I suggest wiring the SNES up to a regular TV to check it works, then wire the PSone screen up to a normal console/VCR/other video source to see if it works.
Edit: If all else fails, break out the multimeter!
EDIT: well I see the screen light up very lightly but when i adjust brightness the snes led flickers so I think I dont have enough juice in the Batteries so Tomorrow maybe gotta find the charger Heck may not have been charged enough in the first place but hey I was so excited I didn't even think to check so I am once again stupid and will attempt to save this stuff another day....
