You could toss it at someone, use it as an external hard drive, listen to music with it, etc.

If it's a 1st Generation iPod & you have the original earphones, you can use it as a torture device!

You can replace the micro drive with more durable flash memory if you're up to a pretty hard core challenge. You could also do a custom paint job on the case.
Getting a tan while everyone else is in a blizzard... >.<

You could replace the backlight with a different color; one of my friends is going to make his iPod's backlight red.

Put an OS on it and take your whole Operating system with your settings and programs to a friends house's (Assuming you have 1 or 10
