I was wondering how you could drill a hole at least 1" in diameter. I don't think that many people have a 1" diameter drill bit or more.
A hole this size could be for a joystick or something.
So what Kind of tool would one use for a hole this size?

Well you have two choices. Speedbor or hole saw. A Speedbor is designed for wood, and will chew up plastic. A hole saw works OK with wood, OK with metal, and (?) with plastic.

You will definitely want to use a hole saw. When using it on plastic, a good method to go so you don't chew up your plastic is to use the hole saw in reverse. (Should be counter-clockwise) And just go slowly.
