can you remove the A/V multiout, dc in jack, head phone and the A/V in from the ps1 screen

Yes, but the only people that do that are the one after the screen itself, and have no use for anything by one A/V input.

yes, you can remove the entire header board even. The pinouts for dierct connections to the lcd controller are on the board.
