No problem. I researched this exact topic about a year ago because a ROM was being translated from Japanese to English, and I wanted to run it on the native hardware(NES). Unfortunately, soon after I bought my EPROM burner, the project slowed to a crawl...
I may still port the Japanese version though, because I like it so much. ^^
Here are the sizes of games and their corresponding EPROMs.
8K 27C64
16K 27C128
32K 27C256
64K 27C512
128K 27C101/27C010/27C1001 (other names for other brands may exist)
256K 27C020/27C2001 (other names for other brands may exist)
512K 27C040/27C4001 (other names for other brands may exist)
1024K 27C080/27C8001 (other names for other brands may exist)
*0K CHR ROM exists, esp. in the MegaMan games, but I have yet to take one appart to see if it is empty or if it uses jumpers.
512K and 1024K games are very rare, and you rarely see above 256K. The biggest game I've seen is Earthbound Zero a.k.a. Mother, which had 256K PRG ROM/ 256K CHR ROM. The 512K chip is probably used for higher level Japanese games or pirate titles that hold many games.
If you get a 27C1024, a 27C2048, or a 27C4096, those aren't recommended, as they are 16-bit EPROMs. Though they are the same size, it may take some work to rig them up.
Here is a page that talks about soldering the EPROMS into the cartridges....

Lists of cartridges(page numbers are arranged by mappers) with mappers, sizes or ROMs, mirring, batteries, and trainers. VERY useful, and it even contains Japanese games! (If these uRLs don't work, try a different browser. I had trouble using them in FireFox on occasion, but IE supports them fine. These lists are large, and may take a little while to load. Also, since these lists are arranged by mapper((the last one is misc mappers, though)), if you find your game on the list, the other games in that list should work if you need to gut them and put EPROMs inside. Of course, I would also try to get a game with the same ROM sizes or bigger, just to be safe.)

I hope this can help you! ^^
PS: The ROM can be split into PRG, CHR, and something else you don't need by converting the normal ROM into PasoFami format. I know uCON64 can do that. Gannon has done that for me a couple times.

Well if you look the list I've found that my SuperJoy III only supports mapper 0. Besides all that XXXX in 1 is a load of crap, no more than ~800 games were ever made for the NES.

duh it onley has like 5 games on it but it says 1000 in 1 on top
so I think it may have mapper 15 embedded in it
Edit: on second thought it probubley has no mapper

Kevin Horton developed the NESdev and it uses a parallel port connection to a computer and so he can port the desired game over and play it on the NES. Thats the only other thing I've heard/seen of that is anything like a multi cart or multiple games for the system.
