Man I just soldered one of those to repair my last Nomad....insanity!
Unfortunately I don't know the 30 pin pinout and it would take a whiiiile to find out. I don't have a Nomad to look at anymore either--just my repaired one which I am NEVER opening again (too dangerous with all the wires and fixes).
I can tell you that 9 of the pins go to the controller chip above the connector...that shouldn't be too hard to trace. The easiest way to find the RGB lines is to just get a datasheet PDF of the chroma encoder for the screen (it's the chip next the the controller IC).
Thing is though, if you're planning on just using the back PCB you will need to make your own chroma encoder circuit (using the CXA1645 or other) to get a useable RGB output. You will probably also need to amp the audio lines (the Nomad has a dedicated circuit for this).
