i thought the magnets would interfere with the electronics side of the portables...

No, they only interfere with hard drives and lcd screens. But if they are on the opposite side of the system from the lcd, you have nothing to worry about.

I picked up the same screen and was wondering if someone knew how to connect a composite signal to it. I'm an absolute beginner at this. I figured I'd connect the green wire to the + of the video rca plug (of the Jakks 10-in-1 Atari 2600 Joystick), and the blue wire to the -. I just get a grey screen with a very vague image of the game menu. In a way this isn't really surprising, because if I understand it correctly, the green wire would normally carry the Luma signal from the Playstation A/V connector.
