Does it void the warranty? If I restore it back to original settings, can Apple tell if it's been jailbroken?

Shouldn't be able to tell, restoring it wipes any trace of the previous firmware off it.

OK, now how do I jailbreak my iPhone 3G with 3.0? I've tried following tutorial after tutorial for redsn0w and can't seem to get my phone into DFU mode...

When your jailbreaking with redsn0w at a certain point it guides you through getting into DFU worked fine for me.
