I think everyone has suggested all the good games aside from Oblivion or L4D so I'll suggest some simple fun.

The arcade compilation disks are nice to have since you don't have to connect to live, pay for each individual one, or download anything

I think they still have the Sega Superstars Tennis/XBLA Compilation combo that came with the arcade units of yore on ebay, and Wal Mart sells a different compilation.

Also try XBLA Unplugged and the Namco Museum XBLA Compilation

I thought Splinter Cell Conviction was a pretty good game. You should definitely check that out. And Red Dead Redemption, that's really popular for now.
