Screen Hacks
Below is the psone screen's controller card pinout. It's pretty much self explanatory.

To input composite video plus left and rght audio without using the mini av/in jack do this:

Red - Right audio
White - Left audio

Updated list on screens you can use:

-PSone screen
-hipgear screen
-Gamecube screens (low quality)
-Pocket TV screens with an AV input

-Any screen specifically designed to be used for composite, or possibly s-video/RGB can obviously be used. Any kind of screen that hooks up to a console can be used, as well (like the Xbox 360 one, the PS2 7" one, etc.). Basically, if the screen is intended as just that, a screen (an it comes with an LCD board to convert the composite signal and provide power), or if it's part of something else (like the pocket TV) but has an AV input (or possibly output, though if it's just output it's less likely) then it can be used. The first two screens mentioned are definitely the best, though, followed by pocket TV screens.

Not quite...

Gamegear, Laptop, Game Boy (and cell phone :P) screens will NOT work by themselves. You would need to buy/build an adaptor board. I know this is on PoD, but it needs to be said here for simplicity's sake.
