I have a gamecube style joystick in my N64 remote. Very smooth, but kind of sensitive.
You can find them online for around 10-15 dollars. Don't buy the other kind though, I heard they are poorly made. Get the one that looks like a gamecube joystick.

Yeah, from what I've heard those joysticks tend to not get the range of the N64 joystick quite right. Most of them are absolutely fine for most games but there are some which will actually screw up due to their range.

As for replacing the original N64 joystick with a PS1 stick, its really really not worth the effort. One of these drop in replacements is much easier.

I'd say they're comparable in difficulty. The replacement sticks which were linked to can be quite good. As TSX420J said try to get a gamecube style one.
