I just made mine last night. All I did was solder some wire from the R audio on the N64 motherboard directly to a headphone jack, as well as ground. This just gives you a very basic mono sound (Solder to L and R for stereo), and you'd have to add a pot to control the volume (Although I find without it it's the perfect level for me). You could probably solder into the amp in the ps1 screen for more volume and control.

To answer the question in your first post, I do believe there is a headphone port on the PSone screen.

The psone does have a headphone jack. You need to connect four wires to a headphone port (left audio, right audio, switch and ground). Then when headphones are plugged in the speakers will turn off and the volume should be controlled by the screen just like the speakers.
