hey im just wondering if i could just get a 7805 voltage regulator (because the nes runs on 5v and the lcd runs on 12v) instead of the the dc-dc converter in the schematic.

Not sure what screen you are using but if it is the standard eBay 3.5" screen it'll run on less than 12 volts just fine (5-12v). Not that this information specifically answers your question. :p

DC-DC converter doesn't seem to be necessary here to me, IMO. 7805 is fine instead.
