Breath Pressure Sensor

Breath Pressure Sensor

I'm thinking about building a MIDI instrument, probably using an Arduino because I know that you can do MIDI things with an Arduino.

I'd like the instrument to be breath powered, that is, the velocity of the note is relative to the pressure of the breath.

It would be like an Akai Ewi, and work similarly but, I have no idea how those things work... How can I build something that detects breath pressure and not get fried from moisture?

Maybe use a small turbine to spin an encoder wheel between an optical sensor and an LED, like you find in a scroll mouse?

Diaphram (from an old speaker perhaps). Moisture collects on one side, sensor on the other.
