could i connect notebook components to gumstix

I found this cool game called M.U.G.EN. I was wondering if i could build something like laptop without a screen that i could connect to a television or
a portable with a screen with laptop components. aAny help would be appreciated.

How about taking a latop with a busted screen and put a tv-out card in it?
