To put it simply...
When you wire the batteries in series (connect positive to negative in a chain), you increase the voltage. In your case you would need 10 of these batteries to make 12 volts. (1.2 x 10)
Wiring them in parallel (all the positive leads tire together, all the negative leads tie together), you basically make a big battery. You add together the battery capacity. Let's just say each of your batteries is 1000mah. In this case you would have a 1.2 volt, 10,000mah battery (10 amps).
