I don't really like how Ben has the brightness and volume buttons, and I was wondering if I could use potentiometers (I think that's the right word for them, the little knob things) instead? How hard would it be to swap those?

Hard. Use buttons.
Actually I don't know how hard it would be, but you may be able to hook them up to the luna and chroma lines. Don't take my word for it though.
