I have a question, could I take the circuit board off that plug and just wire to the metal pins coming off it? By doing this I would have enough room for the wires to fit in the old n64 power brick.

I checked and it won't. theres not enough room for the wires that attach to the plug that the connects to the n64.

God, haunted, don't post without proper knowledge. He can just wire DIRECTLY to the pin's solder pads AFTER the SMT crap. The grey ribbon is useless. Also, you need 7v-35v for the 12v line, and 2.9v(in some cases 3.0)-3.4v on the 3.3v line. BTW- your diagram is fine, but you only need to connect 3....
