If you feed the result of the NAND gate into another NAND gate then you'll have an AND gate. That's just what is shown on the schematic. The IC you ordered is the right one

Have a look at this picture: http://i.imgur.com/tLObv.png You can tie together all the wires that got the same color EXCEPT for the data wires. You have to connect those 2 wires to the 7400. Don't use the setup shown on your (first) pic. That's probably gonna damage your controllers when one controller is driving the data line high and the other one low. Disregard my previous advice. The buttons in the SNES protocol are active low, so you'll need to use a NAND gate instead. Something like a 4011 or 7400. I wasn't even able to read out the N64 controller with the internal 8 MHz oscillator of the AVR MCU. It seems the internal oscillator of the AVR is way too inaccurate...
