Having browsed the forums, and found pinouts and such, but not an actual wiring diagram, I thought I'd give drawing one a go!
And, ta-dah, here we are!

Note, it's a very large image file (physical size wise, not file size wise :p), but hopefully it'll be useful to people.

NOTES:
1. I do not own any of the parts as of yet, as I am waiting for Christmas money :P. I drew the diagram using pinouts provided by other people. Therefore, the diagram can only be considered theoretical, as I havn't actually physically constructed a portable using my diagram.
2. The screen is a Hip Gear Screen, PS2 version (I used Ladyada's pinouts).
3. The reset switch is optional (If you don't want to use it, just connect pin 4 to the ground wire, and don't connect anything to pin 5)
4. I used the whole NES controller PCB in my diagram. The colours on the PCB represent the colour wires coming from the PCB. Please dont ask me how to connect sliced-up controller PCBs, as I don't know :p
5. I havn't yet included the Hip Gear's video adjust board, or any form of sound yet. These should come in version 2 *touches wood*

Thats about it I think. I *hope* this will be useful!
I also gratefully welcome suggestions, corrections, comments etc.
