Just 10k 1/4w will do, but anything from 10k to 100k, 1/8w to 1w or so would work just as well for what you're doing there. 10k 1/4w are just more common and you shouldn't have any problems finding those.

Solder up your new button to the 2 and 3 spots. Since you've removed the Triggers, you'll need to either reinstall them, or just install a 10k Resistor between the 1 and 2 spots. The 'signal' is the center connection of the 3 for the Triggers. You'd wire up your new button to the center spot, then to one of the other ones. You shouldn't have any issues moving it that distance, so check and make sure the wire you've used isn't pinched or shorted somewhere. The problem with those capacitance type of buttons/switches is both sensitivity and lag. Most of them have an amount of lag that if you tried to play a game with it, you'd notice it real quick. What controller is this exactly? If it's an actual 360 controller mod, then it sounds like it was either made wrong and/or the headset connector on it is causing the issue. The headset connector of the 360 controllers has a switch inside it, so the controller 'knows' if a headset is plugged in to it...
